Enjoy the History of “Stuffing”

history of stuffing thanksgiving healthy recipeThe history of Thanksgiving dates back to before the 1700’s, but amazingly the history of stuffing dates back much further…to the Roman Empire!

Recipes for stuffing have been found in Roman cookbooks, and  “stuffing” was a common tradition throughout the “Pilgrim Era”.

Here is an easy, healthy, low-carbohydrate and absolutely delicious bread stuffing compliments of Genetix Program.

Here it is:


(makes 12 servings) Serving size 1/2 cup


1 cup chopped celery

2 cups chopped onion

1 cup “Pacific Brand” low sodium broth (add more as needed to your preference)

1 tbsp of sage or poultry seasoning

Dash Morton’s Lite Salt

Dash Pepper (approx. ¼ tsp)

12 slices of diet honey wheat bread (40-50 cal per slice) cubed. Bake bread in oven @ 375  (spread out across oven), until deep golden brown


1-In medium fry pan, sauté  onion in nonstick cooking spray until browned or “caramelized”… add 1/3 cup chicken  broth and celery continue, and until tender. Remove from heat.

2-Stir in Poultry Seasoning or Sage, pepper, and salt.

3- Place dry bread cubes in large mixing bowl. Add onion/celery mixture.

4-Drizzle with enough broth to moisten, and lightly toss.

5-Coat casserole dish with non-fat cooking spray. Place stuffing in dish and bake @ 375F  for 20 minutes, or until top is golden-browned.

Tip: For more fiber, we used whole wheat light bread. Or, for a different texture and flavor….use cornbread instead or 1/2 wheat bread and 1/2 cornbread.
