Toppings (all optional)


  1. Follow directions on the package to make 3 cups brown rice.


  1. Rinse and drain black beans.
  2. Warm in a saucepan with 1/4 cup water on low.
  3. Season with seasonings to taste.


  1. Cut chicken into bite-sized pieces, season with spices.
  2. Saute in pan until cooked through.
  3. Assemble:  brown rice, black beans, chicken and toppings.
