1) Place the apples in a pan with the honey, cinnamon, and water. Then place over low heat. Cook, stirring occasionally, for 12 to 15 minutes, or until the apples are soft and fluffy. Remove from the heat and beat until free from any lumps. Let cool.
2) Place the yogurt in a large bowl and stir in the apples. Set aside a few fresh raspberries for decoration, then stir the remainder gently into the apple mixture. Spoon into 4 individual dishes and chill for at least 1 hour.
3) Decorate with the reserved raspberries and the mint sprigs and serve.
